Introduction
Xylitol is a sugar alcohol compound with the molecular formula C5H12O5. It is a colourless or white crystalline solid that is easily soluble in water. Xylitol is naturally present in small amounts in various fruits, vegetables and cereals. Humans produce small amounts of xylitol through normal metabolism.
Xylitol is a sweetener used as a food additive and sugar substitute, with the same sweetness as sucrose. It contains only 2.4 calories per gram, 40% less than regular sugar. Xylitol has a sweet taste and low absorption rate, and the rate of increase in blood sugar after consumption is much lower than that caused by the consumption of glucose.
Applications
1. To produce gum, chewing gum, toffee, soft candy, jelly, chocolate, chewing tablets and etc., can cool the throat, clean the teeth and be anti-cariogenic.
2. instead of sucrose, add in soft drinks, milk, bread, preserved fruit, biscuit, yogurt, jam, porridge and etc., to keep
longer & better sweet taste because of its non-fermentability by yeast.
