Introduction:
1.Guar gum is one of the most extensively used food additives of modern food industry. It is a kind of natural green plant gum.It has high molecular weight of about 1-2 millon Dalton composed of galactomannan.Viscosity of guar gum is very high. The viscosity of its solution can reach the maxiumum value when PH value is betwween 6-8. It can be widely used in food processing industry as thickener, stabilizer and suspending agent.
2.Guar gum powder can be fully hydrated in hot and cold water to form a translucent solution.
3.Guar gum is generally used as an excellent and reasonable thickener and stabilizer in many aqueous systems.
4.Guar gum has the highest viscosity after fully dissolving. Long time high temperature treatment will lead to the degradation of guar gum itself and the decrease of its viscosity. Guar gum is the most viscous natural gum which is insoluble in organic solvents such as ethanol.

Application:
