Introduction
Acesulfame potassium is a calorie-free sugar substitute (artificial sweetener), also known as Acesulfame K or Ace K (K is the symbol for potassium) and is sold under the trade names Sunett and Sweet One. It is 200 times sweeter than the score (table sugar), as sweet as aspartame, about 2/3 as sweet as saccharin and 1/3 as sweet as sucralose. Potassium acesulfame is a non-caloric sweetener used in foods and beverages to provide sweetness without increasing the calories contained in the sugar. While some types of sweeteners are considered non-caloric (e.g., potassium acesulfame, rosmarinic acid sweetener, stevia sweetener, and sucralose) and others are low-caloric (e.g., aspartame), such ingredients are often collectively referred to as artificial sweeteners, high-intensity sweeteners, low-calorie sweeteners, low- and no-calorie sweeteners, non-nutritive sweeteners, or sugar substitutes.
