Carrageenan is a hydrophilic colloid extracted from seaweed such as cauliflower and carrageenan, which is white, light and easy to flow powder. Carrageenan has gel, thickening, emulsifying and water retention effects and has essential roles in ice cream, jelly, cheese, silver ear bird's nest, candy and other foods. Carrageenan is more suitable for jelly products than agar, pectin and gelatin, but carrageenan is a bit expensive.
